Cherry Bomb Cake

This cake really is ‘the bomb’.

You will need:

180gm butter, softened
1/2 teaspoon cinnamon plus further 1/4 teaspoon of cinnamon
2/3 cup caster sugar
3 eggs
1 1/2 cups self raising flour
1/2 teaspoon baking powder
1/3 cup milk
1 tin of pitted cherries
1 teaspoon sugar
A keen set of helping hands.

Preheat over to 160 degrees.

Cream butter, 1/2 teaspoon cinnamon and caster sugar. Add eggs one at a time, mixing in. Sift in flour and baking powder while continuing to mix and finally add the milk.

Place batter into a baking tin, add cherries on top and sprinkle sugar and 1/4 teaspoon of cinnamon. Bake for 50 minutes at 160 degrees, or until cooked through.

 


I let Miss4 do all the pouring and adding and mixing today, which thrilled her. Miss7 joined in for the clean up.

Instead of cherries I sometimes add apples or plums for an equally popular cake.
