Occasionally I receive messages from people asking what meals we more regularly prepare for the family as opposed to the nice stuff we have as treats when the kids are asleep. Mostly its meat and three vege. Boring, but practical. But I thought, over the next few weeks, I’d post a couple of recipes the kids fancy.
This is a really simple recipe which the kids love because they can scoop out as much as they like. Lose the chicken and it makes a nice side dish to go with snags and salad.
You will need:
400g pasta of your choice
1 tablespoon butter
1 onion, chopped roughly
2 chicken breast fillets, chopped roughly
1/3 cup light cream cheese
1/2 cup cream
2 x 420g cans of creamed corn
1/2 cup grated tasty cheese
STEP ONE: Boil pasta until just tender. Drain.
STEP TWO: Preheat oven to 180 degrees.
STEP THREE: Saute onions in butter, then add the chicken. Cook through, being careful not to overcook.
STEP FOUR: Add onions, chicken, cream cheese, cream and corn to the pasta and stir through. Pour into a baking dish and top with grated cheese.
STEP FIVE: Cover with foil and bake for half an hour. Remove foil and bake for a further five minutes.
STEP SIX: Allow to cool for five or ten minutes before serving.
