Sunday afternoon pikelets

The kids and I made ourselves a yummy snack today – pikelets – which we smothered in butter with jams and honey.

The recipe comes from Tracey’s schoolgirl cookbook, Day To Day Cookery by I M Downes.

This is my least favourite kind of cookbook – NO PICTURES. How am I supposed to know what I’m aiming for?

In an ironic twist, though, it is the cookbook we use more than any other. So well written, with simple instructions which require no step by step photographic record.

We made two lots of the recipe below to fill all our hungry bellies. Master19 took most of one batch himself.

You Will Need:

1 egg
1/2 cup milk
2 teaspoons butter
1 cup self-raising flour
Salt
3 tablespoons sugar

Place egg, sugar and half of milk in a bowl. Whisk well. Sift flour and salt twice and add to mixture. Add milk until batter is consistency of thick cream. Add melted butter. Beat until smooth. Cook in batches, turning when surface is bubbly. Remove to towel to cool a bit.

Finally, add half a tub of butter to still warm pikelet and hide all evidence of a pikelet beneath layer of jam   🙂   Or however you enjoy eating pikelets will be fine too.
