Delicious Gourmet Mini Cheeseburgers

I held off calling these ‘World’s Best Mini Cheeseburgers’, but only because Tracey thought it might sound a little boastful.

A friend of mine makes a version of these in her catering business and they are always super popular. In fact, it was after tasting hers I decided to start experimenting with my own at home.

How do I know they’re so good? Well, the first time I made them I was really only trying to impress Tracey and I didn’t take into account my kids would devour them eagerly as well, so unfortunately I ended up eating baked beans for dinner. Is there a greater measure than this?

You will need:

1 Large Onion, sliced

Knob of Butter (2 tablespoons)

1 tablespoon Brown Sugar

2 tablespoons Balsamic Vinegar

1 tray Peppercorn Food Company Extra Lean Beef Burgers

1 Egg

1/2 cup Mayonnaise

1 clove Garlic, minced

1 pinch Salt

1/4 teaspoon Lemon Juice

2 Turkish Breads

3 slices of Jarlsberg Cheese

STEP ONE: First, we caramelize the onions. Over a low heat melt the butter and throw in the onions, stirring constantly until they go slightly opaque. Add brown sugar and balsamic vinegar and, still stirring constantly, cook for another five minutes. Remove and set aside.

STEP TWO: Remove the beef patties from the tray and place in a bowl. Add the egg and mix it all together and then roll out smaller patties for our mini burgers. From six patties I made fifteen little ones.

STEP THREE: Spray some oil into a pan and start cooking your patties in batches over a medium heat, turning regularly, until done.

STEP FOUR: Now to make the simple Aioli. Mix your garlic with the pinch of salt and add mixture to the mayonnaise and lemon juice. Mix well.

STEP FIVE: Using a smallish scone cutter, cut out the ‘buns’ from the Turkish bread. Naturally, you’ll need enough for each of your patties. Once separated from the loaf, you can easily pull the top and bottom of your bun apart so you’ve somewhere to put the yummies. Cut the Jarlsberg cheese into the right number of slices too.

STEP SEVEN: Now to assemble your cheeseburgers. On top of your bottom bun place the cooked patties, some caramelized onion, Jarlsberg cheese and a dob of aioli. Place your top ‘bun’ into place.

STEP EIGHT: Now your creations will need a couple of minutes in the grill to lightly toast the Turkish bread and melt that gorgeous cheese.

STEP NINE: Put yours aside. Seriously, you turn your back on these little beauties and you’ll end up opening a can for dinner as well.

Note: You could choose to buy a jar of Aioli from the store, or even a jar of caramelized onions, to save yourself a bit of time in the kitchen, but I think there’s nothing like the smell of fresh garlic and cooking onions to set the mood for a burger meal fit my little Prince and Princesses and, of course, my Queen.
