Chicken Cordon Bleu

Thrilled to announce I’ve been guest blogging on Stay At Home Mum’s website. It’s been a lot of fun and I’ve made contact with some lovely people because of it.

This week I’ve been looking through Stay At Home Mum’s new Once A Month Cooking ebook and as well as some fantastic advice on cooking and freezing a month’s work of meals to save on time and money, it has some recipes I was keen to try out. First off the block is their Chicken Cordon Bleu.

Now I’ve cut and pasted this recipe straight from their website, and I hope the girls don’t mind.

You will need:

    • 1 egg
    • 120ml milk
    • 1kg chicken pieces
    • 100 grams plain breadcrumbs
    • 250 grams ham/bacon
    • 200 grams cubed cheese
    • 1 can Cream of Chicken Soup
    • 1 cup of milk extra

Preheat oven to 180 degrees. Beat egg and milk together until combined. Stir in chicken to coat, then drain. Coat chicken with breadcrumbs. Heat oil in a heavy frypan and fry chicken until golden on all sides. Remove and drain on paper towels.

Place chicken in a baking dish. Sprinkle the ham and cheese over the top. Stir together the soup and milk and pour over the top. Cook in the oven for 30 minutes or until golden brown and bubbly.
