Smashed Potatoes

Is it just me or, outside of milkshakes and desserts in general, does garlic make everything better?

Workload vs praise, there is no better recipe than this.

We went to a friend’s citizenship BBQ on Australia Day and they served up this simple dish, and it was a hit with a capital ‘more please’ with everyone at the table. Naturally I, along with others, asked for the recipe.

I’ve already cooked it up for a family BBQ and they loved it as much as we did.

Blown away with how little effort is required. Blown away, and pleased.

You will need:

1kg medium washed potatoes

olive oil, 1/2 cup

garlic, 2 cloves, crushed

salt & pepper to taste

STEP ONE:  Boil the potatoes until a skewer goes into through them easily.

STEP TWO:  Take the potatoes out of the water and place on an oven pan. Press down on each potato with a masher or, if you’re outback butch, your hand until it begins to break. Not too much, just enough the flesh is peeking out in parts.

STEP THREE:  Put the garlic into the olive oil and mix it up, then spoon a healthy amount of garlic and oil onto each potato. Use any remaining oil to coat the potatoes, grate some pepper and salt onto them, and the bulk of the ‘work’ is done.

STEP FOUR:  Throw the potatoes into the oven at 180 degrees and bake for 20 minutes. I didn’t even preheat it. That takes forethought.

STEP FIVE:  Write out the recipe a few times to hand out to attending friends and family. It’ll save doing it later when your pen has had too much to drink.

  • Jamie Oliver makes a version , towards the end he add bits of bacon and cheddar grated. then some chopped chives to serve.
    But simple is always better

  • Trying this tonight, but thanks to the hobo that lives in a bus in my front yard (true, but strange) … I will be cutting corners by using Organic, cold pressed, garlic infused Olive oil 🙂
