Simple Goats Cheese Croquettes

Tracey took me out for our wedding anniversary this year. Now I’m the SAHD once a week she feels she has to spoil me occasionally. We shared three entrees and two mains, but this was the stand out plate. So, of course, Tracey insisted I make it for her once we got home.

Not a problem.

This is the easiest, most impressive entree ever. Seriously.

I mean, it only has four ingredients! You can add more if you want – like garlic powder or spices in the panko breadcrumb mix, or chives in the goats cheese – but you don’t have to. The only problem is this recipe really only serves one. Even if you double the ingredients. Ever if you triple them.

You will need:

120g Goat’s Cheese 

1 Egg

1/2 cup Panko Breadcrumbs

1 cup Peanut Oil

STEP ONE: Place the goats cheese into the freezer for ten minutes. Meanwhile, beat the egg in one bowl and pour the breadcrumbs into another.

STEP TWO: Cut the goats cheese into five even slices. Take a moment to shape them like Clunkers.

STEP THREE: Dunk the cheese into egg, then the breadcrumbs.

STEP FOUR: Heat the oil in a small fry pan. Croquettes should be about halfway submerged when cooking. They’ll need about two minutes and then turn and cook for another two. Done. Seriously.

STEP FIVE: Have sex. Either with yourself or whoever is lucky enough to have been granted a croquette. It’s a sure thing.
