Russian Caramel

A heap of kids invaded our house today to celebrate Miss1’s second birthday. Not that it was her actual birthday but we’re guessing most people would find an excuse not to come over here on Boxing Day. Best of all today, I was at work 🙂 I know I was lucky not to be here today because Tracey went to sleep three hours early – she was knackered.

One of the treats she prepared was Russian Caramel, a recipe she makes from I M Downes’ Day to Day Cookery.
You will need:
3 tablespoons butter
2 tablespoons golden syrup
1/2 cup sugar
1/2 can condensed milk
Vanilla essenceStir butter, golden syrup, sugar and milk over heat until it melts and boils, then continue to cook, stirring well, for about 15 minutes. Add the vanilla essence then turn the whole lot onto a buttered plate. Mark into squares. Cut when cool and divide into two roughly equal potions. Hide the larger half. I have. Don’t tell.
