Banana Cake Recipe

With so much fruit in the house, even a house with as many kids as ours, it is inevitable there will be fruit left over and going bad – so lets bake a cake!

The little kids LOVE being involved in adding ingredients and turning on the mixer, and especially in licking clean the beaters and bowls when we’re done mixing. I use these ‘cooking lessons’ to teach the kids that just because you don’t like the taste of something on its own doesn’t mean you won’t like it when it’s mixed in with everything else. Let them try the flour or buttermilk or lemon juice. If they screw up their face, all the better for the lesson. I feel obliged to warn you, however, that because of this strategy I do have a son who likes to chomp on raw potatoes and pumpkin.

At the end of a ‘box of bananas’ week we like to make this wonderful cake and then sit in the kitchen spreading butter all over a hot slice and making lots of ‘yhummmm’ sounds. Actually, we tend to make three cakes and hope there’s enough leftover after the weekend for Monday’s school lunch.

No Drama Banana Cake

2 ripe bananas, mashed
60g butter, softened
1 teaspoon lemon juice
1/4 cup buttermilk
1 cup sugar
2 cups self raising flour
2 eggs, beaten

Preheat over to 160 degrees. In a mixing bowl, pour lemon juice into the buttermilk and give it a stir before adding mashed bananas, sugar, sifted flour, beaten eggs and melted butter into the bowl and gently combining. Beat for a couple of minutes and then pour the whole mess globbily into a greased tin. Bake for 3/4 hour, or until cooked and emitting a smell that draws the neighbour’s kids from across the street into your kitchen.
