Nice Ice Coffee Dessert

I have no idea what I’ve just made, but it tastes good. Closest I can explain it is it’s a bit like an Affogato.

I’m always looking for new and exciting ways to maintain my coffee intake. On our recent holiday, while changing DVD’s for the kids, I came in halfway through one of those wonderful cooking shows where some guy is travelling around the globe making local dishes from local produce and making us all feel we might have a shot at occasionally turning out something more exciting than spaghetti bog.

This dessert is super easy, and super cheap, and it takes about one minute every half hour for three hours to make.

You will need:

A strong cup of black coffee (we used a plunger)
A cup of caster sugar
300 ml of cream
A tablespoon of icing sugar
A teaspoon of vanilla essence

Take a flat dish, like a cake tin or a lasagna dish, and put it in the freezer for half an hour. Remove dish from freezer and put the caster sugar in it. Pour hot coffee over sugar, then take a fork and mix it around until all dissolved. Place tray into freezer. Every half hour, take out tray and stir mixture with a fork, breaking up the granules when it starts to become frozen.  Ultimately, the mixture is ready when you go at it with a fork and it looks a bit like raw sugar. Now whip the cream, icing sugar and vanilla essence until it peaks. Put some of the coffee ice into a little bowl and add a dollop of the cream.

Heaven will serve desserts like this in the Cloud Nine Cafeteria – it just melts in your mouth in a cool & refreshingly sweet coffee burst of wonderfulness.
