Hot Date Cake

I went to make lunches for the kids tonight and there was bugger all in the pantry, so I’ve scrounged around and found dates and have decided to give Date Cake a go.

You will need:
250g chopped pitted dates
1 ts bicarbonate of soda
1.5 cups boiling water
3/4 cup brown sugar
125g butter, softened
1 ts vanilla extract
2 eggs
2 cups self-raising flour

Preheat the over to 180degrees and get a cake tin ready. Boil the water and throw it over the dates with bicarb, leaving them to soften for about 20 minutes. Beat the butter, sugar and vanilla, then slowly add the eggs, mixing well. Hand mix the date mixture in (yes, you use the water as well) and the flour. Combine well. Throw mixture in the pan and into the over for about 40 minutes, or until cooked through.

My tin wouldn’t quite take all the mixture so I poured the remaining mix into a souffle dish. Now as this little cake emerged from the oven I had a revelation – I have more brown sugar, more vanilla essence, more butter. I have cream. So made up some caramel sauce and sure as houses, Sticky Date Pudding.

You will need:
300g cream
1 cup brown sugar
1/2 ts vanilla essence
50g butter

Melt these four ingredients in a bowl – bring to boil and then lower heat and simmer for 2 more minutes.

Add a dollop of cream on top and wait until people are three quarters done before you drop the bombshell, “No, it’s not store bought. I made it myself.”

There will be gasps and possibly applause. Ticker-tape and the keys to the city aren’t out of the question.
