“Hummus!” Miss3 screamed joyfully when she saw the bowl I’d just placed on the table. Miss1 had already pulled up a chair and hot on their heals was Miss6.
Miss1 was not happy to have company at the table, pulling the bowl towards herself in a very proprietorial manner. For a minute she clearly thought the whole thing was for her.
Hummus is one of those things you buy without realizing how simple it is to make. And by simple I mean this took longer to assemble all the ingredients and processor on the bench than it did to put together: by which I mean about three or four minutes.
We love hummus in this family, and at least once a week you’ll find our kids sitting on the balcony after school dunking anything from Turkish bread to rice crackers into a bowl of the stuff. When I asked the kids what they wanted to snack on while watching the NRL finals, this was the first cab off the rank.
You will need:
Tin of chickpeas, 400g
Garlic, 2 cloves, crushed
Tahini, 3 tablespoons
Lemon Juice, 3 tablespoons
Olive Oil, 3 tablespoon
STEP ONE: In a food processor, mix the chickpeas, garlic, tahini and lemon juice until finely chopped.
STEP TWO: Keep processor running and slowly add olive oil.
STEP THREE: Serve with corn chips or pitta bread or Turkish bread or whatever takes your fancy.
STEP FOUR: If your family likes hummus as much as ours, begin making another batch immediately.
