Holy Guacamole

Bought dips are great but there’s nothing quite like putting together fresh ingredients to come up with something far superior to really treat your taste buds.

The coriander in this guacamole, which I picked up fresh from our local IGA, gives this dip the most joyous crisp flavour. In fact, the whole thing was so delish we were flat out getting a photo of the end result because I stupidly gave Miss1 a spoonful before I was ready to serve it up. So what you don’t see is Miss1 screaming for her supper just off camera. Well, in these photos – she was in shot for many pics I didn’t use.

You will need:

3 very ripe avocados

3 tablespoons lime juice

2 tablespoons coriander, chopped

1/2 small red onion, chopped fine

1 tablespoon sweet chilli sauce

1 tomato, chopped

1 tablespoon salt

STEP ONE: Halve your avocados, remove the seed and scoop the flesh into a bowl and mash it up with a fork.

STEP TWO: Add lime juice and mix it through.

STEP THREE: Add the coriander, red onion and chilli sauce, and give it all a mix.

STEP FOUR: Throw the tomato in and sprinkle salt over everything before mixing it up.

STEP FIVE: Serve with corn chips. Or just with a spoon.
