Grandma’s Shortbread Biscuits

I’m going to let you in on a secret – this recipe business on the blog is the biggest self-serving caper I’ve ever come up with. I tell my mother how much I used to love eating such-and-such a thing when I was a kid, and she agrees to make it for me. With one of the kids, no less, so I don’t even have to help! I am loving it.

This week Grandma and Miss3 whipped me up some of my favourite cup of tea accessory. That’s right, they’re so easy to make a three year old can assist you.

You will need:

250g butter, softened

1 cup icing sugar

1 cup cornflour

1.5 cups plain flour

pinch of salt

 

STEP ONE. Cream butter and sifted icing sugar.

STEP TWO. Add sifted flours and salt, mix well.

STEP THREE. Knead lightly.

STEP FOUR. Make two logs from mixture (approximately 15cm x 4cm each), then wrap in cling wrap.

STEP FIVE. Refrigerate logs for an hour.

STEP SIX. Cut logs into 5mm ‘coins’.

STEP SEVEN. Bake in oven at 180 degrees (fan forced) for 15 minutes or until cooked.
