Grandma’s Parmesan-Herb Lace Biscuits

Want to make biscuits but don’t have any flour in the house? Not problem! Grandma has the solution.

I spent a couple of hours down at Grandma’s this morning with Miss9 and Master8, cooking up a storm. We rode our bikes down for a bit of exercise and, for once, Master8 didn’t drive me into an overhanging tree. Who said I can’t be taught?!

First off the chopping block were these fantastic crunchy biscuits. Not even sure biscuit is the right word for something which tastes deliciously similar to the bits I pick off the tray when I cook the kids grilled cheese fingers.

Four ingredients and a couple of minutes are all you need. Longest part of the whole affair is waiting for them to cool down enough so you can pick them up to eat.

You will need:

75g fresh Parmesan, finely grated

1 tablespoon fresh parsley, finely chopped

1 tablespoon fresh chives, finely chopped

1/4 teaspoon paprika

 

STEP ONE. In a bowl, mix everything.

STEP TWO. On tray lined with baking paper, scoop 1 teaspoon of mixture about 5cm apart.

STEP THREE. Cook under hot grill for 1 minute.

STEP FOUR. Allow to cool on tray for 5 minutes.

These delicate little morsels didn’t last long this morning. Fortunately a second batch was only a few minutes away.

Grandad gets up off his chair for another cheesy biscuit. Spots the last one. He never stood a chance.
