Grandma’s Classic Sausage Rolls

 

 If you like store bought frozen sausage rolls, don’t make these. You will hate yourself because you won’t like those tasteless lumps of cardboard anymore and instead will have to make these for all kids’ parties and junior functions. Thankfully, they’re easy to make.

These are the bomb. The sausage rolls you see in the photos started to disappear before they were even cool enough to eat (I have a burn on my tongue to prove it).

It took less than an hour to make and devour these scrummy morsels, which have been a favourite at our family functions for my entire life.

You will need:

750g sausage mince

1 onion, finely diced

1/4 teaspoon mixed herbs

1 clove crushed garlic

salt, pepper

4 slices white bread

3 sheets of puff pastry

1 egg-yolk

water

STEP ONE. Cut crusts off bread and place in bowl with enough warm water to cover. Let stand for 5 minutes.

STEP TWO. Preheat oven to 220 degrees.

STEP THREE. In another bowl, mix sausage mince, onion, herbs, salt and pepper.

STEP FOUR. Drain water from bread and squeeze bread gently to extract water. Add in to sausage mixture.

STEP FIVE. Trim a thin edge off each pastry sheet and cut into half (each pastry sheet makes two rows of sausage rolls).

STEP SIX. Make a 2cm thick strip of sausage meat along the long edge of one of the pastry sheets. You can pipe it if you feel like being fancy. Roll pastry so filling is completely enclosed.

STEP SEVEN. With back of knife, flatten rolls slightly then brush with egg yolk mixed with a little water. Cut into whatever size sausage rolls you like. Ours were about 5cm long.

STEP EIGHT. Place rolls on a greased oven tray and into oven for 10 minutes. Reduce heat to 180 degrees for further 15 minutes.

STEP NINE. Grab the sauce and a plate. Get some for yourself. Call out and let the hordes know they’re ready to eat.

For variation, you might add a few tablespoons of sweet chilly sauce or plum sauce, or some diced bacon or cheese, or even mint or parsley. Once you’ve got the basics of sausage mince and pastry, the world of sausage rolls is your oyster.
