Grandma’s Cheddar Cheese Biscuits

This fantastic recipe alleviates the drudgery of slicing cheese and finding a biscuit to eat it on by combining the two. Brilliant? I think so too.

Grandma has been making these for about fifteen years. Fifteen happy years. The secret is to not eat all the ingredients before you’ve had a chance to add them to the bowl. This is much, much harder than it sounds. Foreseeing this problem I had the clever idea to buy twice the amount of cheddar required for the biscuits. It was still a close call.

These cheesy circles of tasty love are easy to make and, except for the 3 hours of refrigerating smack bang  in the middle, quick – fifteen minutes of prep and mixing, then fifteen minutes in the oven. So simple. Now say Cheese!

You will need:

1 cup plain flour

2 tablespoons self-raising flour

1/2 teaspoon salt

1/4 teaspoon cayenne

125g butter

2 tablespoons grated Parmesan cheese

125g grated Cheddar cheese

1 tablespoon lemon juice

STEP ONE. Sift plain and self-raising flours, salt and cayenne into a bowl. Careful not to overdo the cayenne.

STEP TWO. Rub in butter, Parmesan and Cheddar.

STEP THREE. Using lemon juice, mix to a soft dough and then shape mixture into a 40cm log. Wrap in cling wrap and refrigerate for at least three hours.

STEP FOUR. Sip wine and think lovely thoughts. If possible, nap.

STEP FIVE. Preheat over to 180 degrees.

STEP SIX. Cut roll into 5mm thick ‘coins’, place them on trays lined with oven paper. Bake for 15 minutes.

STEP SEVEN. Once cool, hide inside empty teabag boxes at back of pantry.

  • Tried these today and they are awesome. Three cheers for grandma. I will be making these again for sure. Love home made snack foods so i know what my family is eating. I am a big believer in boxes at the grocery store being incorrectly labelled as ‘food’. Said it before, keep the recipes coming. Always enjoy the blogs.
